The Los Angeles chain Pink Taco founded back in 1999 is finally arrving in the Windy City. Located in the old Bull & Bear spot on 431 N. Wells St. makes this the prime location for diners eaitng in the heart of the city.
A large wooden door greets guests as they enter the front bar area. Happy hour currently runs from 4 p.m. to 7 p.m. so expect this area to be packed in the future thanks to discounted beverages and food. I told my posse back at Tribune Media about the deal and they immediately planned an outing to visit.
Start off with a refreshing Something Pink maragarita made with prickly pear puree and Codigo 1530 Blanco tequila. The agua fresca will also refresh without the alcohol in a pineapple or watermelon flavor. The drinks are smooth and go down easily.
For appetizers try the queso bean dip or the street corn with chipotle mayo and chili powder. Que rico!
For main dishes a must try is the Lobster Enchiladas. The Mexican crema was absolutely delicious and demands a return visit. The signature Pink Taco made with chicken hit the spot and filled up our bellies until we were ready to bust.
The decour created by an artist from Pilsen keeps the place casual and fun. From a Patron soap dish, kegs as urinals, flaming skull heads, and a wrestler busting out of the back wall, this soon to be hot spot hits just the right notes. The staff seems to genuinely have fun at their jobs and that makes a huge difference in the restaurant world.
When the weather cooperates a patio along the side of the building is planned plus the addition of a food truck to boost business. In my opinion this taco joint will be busting out all over this summer!
