A bustling stretch of North Broadway is about to get a lot more flavorful. And a whole lot more fabulous.
The beloved former Pasteur restaurant space at 5525 N. Broadway, Chicago's Edgewater and Uptown corridor, is officially roaring back to life with a double-dose of exciting news. Banners recently hung outside the venue have confirmed a highly anticipated reopening on Wednesday, Oct. 7, 2026, introducing a unique dual-business concept: Pasteur & Pho Panh.
For neighborhood foodies, the return of the Pasteur name to the block brings a wave of nostalgia and excitement, now paired with what promises to be a comforting and vibrant Vietnamese noodle experience under the Pho Panh partnership.
But the culinary revival isn't the only thing drawing looks from passersby. Just below the restaurant's iconic cursive signage, a bright pink-and-white banner has announced the arrival of "The Best Little Pourhouse in Chicago." It's a Dolly Parton pop-up bar launching on the same evening, Wednesday, Oct. 7, at 4 p.m.
Featuring an illustrated likeness of the beloved country music legend and LGBTQ icon in a glamorous red gown, the pop-up seems perfectly positioned to capture the spirited, inclusive energy of the neighborhood. The "Pourhouse" pays a playful, high-spirited tribute to Dolly, located just steps from the area's celebrated outdoor community murals, including the famous Dolly Parton portrait on the nearby Lytle House gate.
With two stone lion statues guarding the entryway and festive banners now officially in place, 5525 N. Broadway is gearing up to be the North Side's go-to destination for comforting bowls of pho, rich history, and a lively, Dolly-inspired toast to the community.
