Fat Rosie's Taco & Tequila Bar celebrates like no other restaurant

The annual celebration on the fifth of May is revving up quickly and no one does it exactly like Fat Rosie's Taco & Tequila Bar. Cinco de Mayo is right around the corner and spring is in the air, so let's bring out the sombreros. Mexico's victory over the French Empire at the Battle of Puebla in 1862 is commemorated in a variety of ways in the United States each year.

For the Scott Harris Hospitality group, this is a chance to strut their stuff and party like there is no tomorrow! This restaurant chain has big plans musically for this wild holiday with DJs, Mariachi bands and talented singers already scheduled.

There are four Fat Rosie's locations in Frankfort, Naperville, Schaumburg and Lincolnshire, Illinois. While they are each special and unique, the decor is always fun, festive and over the top.

From drag queen brunches to exciting promotions, this place has something for everyone. If a diner can devour El Patron Gordo Burrito in 12 minutes or less then it's free! That is possibly easier said than done with a massive three-pound burrito stuffed with steak, cheese, rice and beans, among other ingredients.

Shots can land at a guest's table complete with sparklers in a colorful toy plane or a conga line can spontaneously begin at any moment thanks to an entertainer that roams among the tables encouraging all kinds of antics. Before you think this is all gimmicks and tricks, the cuisine is what makes Fat Rosie's truly memorable.

The culinary director Dudley Nieto has assembled a menu that is simply out of this world. Start off with the assorted platter or Plato Surtido with guacamole, ceviche campechano tostadas, sopes with chicken mole and quesadillas. The mole sauce is made in-house, which makes a huge difference in terms of taste and substance.

This kitchen staff certainly knows their way around a sope, a traditional Mexican dish with a fried masa base and a variety of toppings. The taco menu is presented with everything from fish, chicken, steak or veggies.

Main plates include an unforgettable grilled skirt steak topped with a house salsa called the Tampiquena. The Arroz a la Tumbada is a must-try item with shrimp, calamari and clams drowned in rice with a special Morita chiles garlic sauce.

The Cochinita Pibil contains a memorable slow-braised pork shoulder wrapped and cooked in banana leaves. Sorry downtown restaurants, your Pibil just can't hold a candle to this one!

Wash this all down with a frozen Fat Rosie margarita or sangria. Like your beer upside down and pouring into your margarita? Look no further than the Corona-Rita that's swimming in blue agave tequila.

If one is not feeling Fat yet, then try some tres leches cake or flan that are both bursting with flavor. Who would think that a restaurant named after a donkey would have such quality offerings and attentive waitstaff? Fat Rosie's is the place to be with a welcoming atmosphere and a taste of Mexico!
