Book signing for Michelin-Starred Chef Paul Virant in celebration of his cookbook “The Preservation Kitchen: The Craft of Making and Cooking with Pickles, Preserves, and Aigre-doux”. Renowned for his many accomplishments at Vie and Perennial Virant, The Preservation Kitchen, Chef Virant’s collection of canning techniques, preserve recipes and seasonal menus, reveals the magical world of capturing flavors in a jar with recipes and spectacular photos. Chef Virant is the first Michelin-Starred chef to write a canning manual cookbook.


The first half of cookbook features tangy jams, brandied fruits, cured meats and zesty relishes, while the second half showcases Virant’s preserves pairings with multi-course seasonal menus. While accessible for home cooks, The Preservation Kitchen also offers detailed information for experienced canners.

FOODease will be celebrating the book signing by featuring a recipe straight from The Preservation Kitchen, which will be available for purchase at FOODease for $29.99.
